MARE does not try to compress Peru into a single formula. Its menu pairs Peruvian products with contemporary technique, moving across seafood, meats, Andean grains, tubers, vegetables, desserts, pisco cocktails and Peruvian wines.

Ingredients come before labels

The current menu names the ingredients clearly: trout, alpaca, octopus, native potatoes, olluco, quinoa, kiwicha, cushuro, goldenberry, huacatay, cacao and seasonal mushrooms. Contemporary technique is used to build texture, balance and presentation around them.

That approach appears in dishes such as Trout Ceviche with traditional leche de tigre, Alpaca Tartare with cocona, Pomata Trout with seasonal tuber purée and Cacao presented in several textures.

The menu leaves room for different choices

Guests can order à la carte, choose a dinner tasting menu, visit for cocktails or explore Peruvian and international wines. The kitchen also publishes vegan dishes rather than treating dietary needs as an unlisted exception.
